2 egg yolks
3/4 teaspoon salt
1/2 teaspoon powered mustard
1/8 teaspoon sugar
Pinch of Cayenne
4 to 5 teaspoons lemon juice or white vinegar
1 1/2 cups
olive or salad oil
4 teaspoons hot water
Beat yolks, salt, mustard, sugar, pepper and 1 teaspoon lemon juice(or vinegar) till very thick and pale yellow.
Start adding 1/4 of the oil,bit by bit,beating as adding (this is where a blender,or food processor comes in handy,I use a
immersion hand blender)
Continuing to blend, add another teaspoon of lemon juice and a teaspoon of hot water,add another 1/4 cup oil and
teaspoon of lemon juice and water.
Add 1/2 cup oil and rest of water and lemon juice,all while blending.
Add remaining oil,blending till thick and combined.
Cover and Refrigerate,use with in a week.
Makes 1 1/2 cups of Mayonnaise
