Out-of-town Family and Hot days

Sorry to my blog friends for my absence.

We have family from Nebraska visiting with twin 5 year old boys!!

But,I wanted to make sure you all knew you were not forgotten and I wanted to give you all something to help cool you off from these hot days we have had lately.........

Homemade Mayonnaise

2 egg yolks
3/4 teaspoon salt
1/2 teaspoon powered mustard
1/8 teaspoon sugar
Pinch of Cayenne
4 to 5 teaspoons lemon juice or white vinegar
1 1/2 cups olive or salad oil
4 teaspoons hot water

Beat yolks, salt, mustard, sugar, pepper and 1 teaspoon lemon juice(or vinegar) till very thick and pale yellow.
Start adding 1/4 of the oil,bit by bit,beating as adding (this is where a blender,or food processor comes in handy,I use a immersion hand blender)
Continuing to blend, add another teaspoon of lemon juice and a teaspoon of hot water,add another 1/4 cup oil and teaspoon of lemon juice and water.
Add 1/2 cup oil and rest of water and lemon juice,all while blending.
Add remaining oil,blending till thick and combined.
Cover and Refrigerate,use with in a week.
Makes 1 1/2 cups of Mayonnaise

I see these kitchens and cool lemonade,sugar cookies and a vase of tulips come to mind.

Easy Peasy Homemade Ricotta Cheesy

Homemade Ricotta Cheese

1 Gallon fresh whole milk ( I use fresh goats milk )
1/4 cup apple cider vinegar
1/4 to 1/2 teaspoon course kosher salt

Pour milk into a large pan,heat up to 185 degrees.
Remove from heat. While gently stirring,add the vinegar,tiny curds will form,let sit for a couple of minutes then pour into a colander lined with cheese cloth.
Let drain for 20 minutes.
Mix salt to taste.
If you want a real creamy cheese add a little heavy cream to the mixture before putting in fridge ( I don't do this,I think its creamy enough:)
Will keep for a week.

You can make your own homemade ricotta cheese!
